Raw & Sautéed Veggie-Packed Salad with Lemon Vinaigrette

What you’ll need:

  • 4 baby cucumbers, diced

  • 1 bell pepper, diced

  • 1 shallot, diced

  • One bunch of skinny asparagus, chopped into 1-inch pieces

  • About 2 cups green beans, chopped into 1-inch pieces

  • 1 or 2 cups of peas, frozen

  • Chives (a small handful), chopped

  • Feta cheese

  • 1 cup cooked couscous

  • Salt & pepper

For the dressing:

  • Juice from 2 lemons

  • 1/4 c olive oil

  • 3 garlic cloves, grated

  • 1 tsp Dijon mustard

  • A good squeeze of honey (about 1 tsp)

  • A pinch of salt

  • Cracked black pepper

  • 1 tsp dried or fresh thyme

How to make it:

  1. Prepare your couscous per its packaging instructions

  2. Sauté asparagus and green beans in olive oil, adding the peas after a few minutes. Season with salt and pepper

  3. Dice raw veggies (cucumbers, bell pepper, shallot)

  4. Chop chives and break up feta

  5. Make your lemon vinaigrette

  6. Combine everything and top with feta, chives, and cracked black pepper
