Apple, Cheddar, Parsnip “Salad”
What you’ll need:
1 large honeycrisp apple, cut into matchsticks
1 parsnip, peeled and cut into matchsticks
About half of a 7oz block of sharp white cheddar cheese, cut into matchsticks
1/2 of a red onion, thinly sliced
Handful of finely chopped parsley (chives would be good too)
Freshly ground black pepper
For the dressing:
1/4 c olive oil
1 tbsp apple cider vinegar
1 tbsp honey
2 tsp dijon mustard
Pinch of salt
How to make it:
Chop apples, parsnip, and cheese into matchsticks. You’ll want an even ratio of the three.
Chop onion and parsley as finely as possible.
Whisk together your dressing in a large bowl.
Add the apple, parsnip, cheddar, onion, and parsley.
Toss to coat and season with pepper. Add more parsley for garnish.
