Apple, Cheddar, Parsnip “Salad”

What you’ll need:

  • 1 large honeycrisp apple, cut into matchsticks

  • 1 parsnip, peeled and cut into matchsticks

  • About half of a 7oz block of sharp white cheddar cheese, cut into matchsticks

  • 1/2 of a red onion, thinly sliced

  • Handful of finely chopped parsley (chives would be good too)

  • Freshly ground black pepper

For the dressing:

  • 1/4 c olive oil

  • 1 tbsp apple cider vinegar

  • 1 tbsp honey

  • 2 tsp dijon mustard

  • Pinch of salt

How to make it:

  • Chop apples, parsnip, and cheese into matchsticks. You’ll want an even ratio of the three.

  • Chop onion and parsley as finely as possible.

  • Whisk together your dressing in a large bowl.

  • Add the apple, parsnip, cheddar, onion, and parsley.

  • Toss to coat and season with pepper. Add more parsley for garnish.
