Mediterranean-Inspired, Veggie-Packed Salad with Red Wine Vinaigrette
What you’ll need for the salad:
1-2 cups cooked quinoa or pearled couscous (I used 1 cup of couscous)
2 large bell peppers (I used red and orange), diced
1 small red onion or half of a large red onion, diced
3 mini cucumbers, diced
Feta cheese (about a cup)
2-3 leaves Basil, chopped
Handful of arugula
The juice of 1 lemon
What you’ll need for the dressing:
1/3 c olive oil
1/4 c red wine vinegar
2 tsp dijon mustard
1 tsp dried oregano
1 tsp honey
A pinch of salt and pepper
How to make it:
Combine salad ingredients, squeeze the lemon juice over top, and toss
Combine dressing ingredients and toss into salad
Top with pepper and serve
