Mediterranean-Inspired, Veggie-Packed Salad with Red Wine Vinaigrette

What you’ll need for the salad:

  • 1-2 cups cooked quinoa or pearled couscous (I used 1 cup of couscous)

  • 2 large bell peppers (I used red and orange), diced 

  • 1 small red onion or half of a large red onion, diced

  • 3 mini cucumbers, diced

  • Feta cheese (about a cup)

  • 2-3 leaves Basil, chopped

  • Handful of arugula

  • The juice of 1 lemon

What you’ll need for the dressing:

  • 1/3 c olive oil

  • 1/4 c red wine vinegar

  • 2 tsp dijon mustard

  • 1 tsp dried oregano 

  • 1 tsp honey

  • A pinch of salt and pepper

How to make it:

  1. Combine salad ingredients, squeeze the lemon juice over top, and toss

  2. Combine dressing ingredients and toss into salad

  3. Top with pepper and serve
