Crispy Oven Roasted Potatoes
What you’ll need:
1 lb fingerling potatoes
Avocado oil
Italian seasoning
Salt & pepper
How to make it:
Quarter the potatoes into wedges & toss them into a small pot
To the pot, add cold water (enough to cover the potatoes) and salt the water
Simmer the potatoes until fork tender (about 5 minutes), drain and set aside
Meanwhile , preheat your oven to 425º
Coat a dark roasting pan (or a deep baking sheet) with a thin layer of avocado oil. You’ll want there to be enough oil to generously coat the potatoes.
Add the oiled pan to the oven to preheat
Once the oven is preheated, carefully remove the preheated pan and add the potatoes, gently tossing them in the oil
Season with salt, pepper, and Italian seasoning
For ultimate crispiness, turn the potatoes so that the cut side is down (not the skin)
Bake the potatoes for 25-30 minutes
Optional: finish the potatoes under the broiler for 5 minutes for extra crispiness
