Lemony Pasta with Sausage & Parmesan
What you’ll need:
8 oz Brami Radiatori pasta (or any bite-sized shape)
16 oz ground Italian sausage
Olive oil
1 large shallot, diced
5 cloves garlic, minced
½ tsp Dijon mustard
1 c dry white wine or chicken broth
Optional: a couple handfuls of kale or spinach
Juice from 2 lemons
Grated parmesan (about a cup)
Fresh parsley, chopped
Salt, pepper, and red pepper flakes to taste
How to make it:
Boil a large salted pot of water and cook the pasta al dente.
Meanwhile, add the sausage and onion to a skillet with a drizzle of olive oil and sauté over medium-high heat for 8-10 minutes or until it's cooked through and nicely browned.
Reduce the heat to medium, stir in the garlic and Dijon mustard, and cook for about 30 seconds.
Pour in the wine or broth and cook until reduced by half (about 1-2 minutes).
Add in the spinach or kale (if using). Toss until the spinach has wilted, then add in the drained pasta.
Add lemon juice and grated parmesan and toss again.
Season with salt & pepper as needed. Serve immediately with freshly grated parmesan cheese, red pepper flakes, and chopped parsley over top.
